1 cup (250 mL) finely diced onion
2 garlic cloves, chopped
3 cups (750 mL) grated sweet potatoes
2 tsp (10 mL) chili powder
1 cup (250 mL) cooked split red lentils
1 lime, zest and juice
1 tsp (5 mL) hot sauce
to taste, salt and ground black pepper
8 large eggs, beaten
1 Tbsp (15 mL) chopped cilantro
6 whole wheat wraps
1 cup (250 mL) finely grated aged cheddar cheese
1 large ripe avocado, seed & skin removed, cut into strips

Quick Tip: Prep the night before - toss sliced avocado with lime juice before wrapping to prevent browning. Mornings will be a breeze!
