The Full Lentil Breakfast Cook-up Burrito

    3 cups (750 mL) shredded potato hash browns, frozen

    5 cups (1.25 L) whole red lentils, cooked

    10 bacon rashers, raw

    3 cups (750 mL) cheddar cheese, shredded

    2 cups (500 mL) cherry tomatoes, halved

    3 cups (750 mL) spinach

    10 eggs, scrambled

    3 cups (750 mL) button mushrooms, sliced and sauteed

    10 large whole wheat tortillas


Directions

  1. On a large sheet tray covered in foil. Create 10 separate piles of potatoes topped with lentils and a single piece of bacon draped over top. Cover evenly with cheese.
  2. Place under a salamander or broiler until bacon is cooked and cheese melted. Add tomatoes and spinach to each pile, return to heat and cook for an additional 2 minutes until the tomatoes begin to blister.
  3. Build each burrito by placing the hot lentil pile onto each flat tortilla. Top with eggs and mushrooms.
  4. Add an optional dash of either hot sauce or ketchup. Wrap and serve hot.
