Smash-Style Asian Turkey Burger

    ½ cup (125 mL) lemongrass, minced

    2 Tbsp (30 mL) fresh ginger, minced

    1 Tbsp (15 mL) sesame oil

    30 oz (850 g) ground turkey

    20 oz (525 g) split red lentils, cooked

    ¼ cup (60 mL) cilantro

    2 cups (500 mL) choy sum, roughly chopped

    2 tsp (10 mL) low-sodium soy sauce

    2 cups (500 mL) low-fat mayonnaise

    ½ cup (125 mL) garlic, minced

    2 Tbsp (30 mL) mirin

    10 hamburger buns


Directions

  1. Heat a plancha over high heat until it is smoking.
  2. In a small sauté pan, sauté the lemongrass and ginger in sesame oil until tender, roughly 5 minutes.
  3. In a large mixing bowl, combine turkey, lentils, lemongrass mixture, and cilantro.
  4. Gently form into 10 cylindrical pucks, pressing together just until meat holds its shape without falling apart. Season generously on all sides with salt and pepper.
  5. Place the pucks onto the plancha and using a firm, stiff metal spatula, press down firmly until roughly 4-4.5-inches in diameter and ½-inch thick. It helps to use a second spatula to apply downward pressure to the first if you are having trouble smashing them hard enough.
  6. Cook without moving until a golden brown crust develops, about 1 ½ minutes. Use the edge of the spatula to carefully scrape up and flip the patties one at a time, making sure to get all browned bits removed from the skillet.
  7. While the burgers are cooking, bring a large pot of water to the boil and add the chopped choy sum. Cook until bright green, roughly 40 seconds. Remove and drain well then toss with soy sauce and set aside.
  8. In another small mixing bowl, combine mayo, garlic, and mirin.
  9. To build a burger, add mayo, choy sum and one patty to each bun.
