1½ cup (375 mL) fennel, cleaned and thinly shaved
1 cup (250 mL) cooked or canned green lentils, drained and rinsed
2 cups (500 mL) baby arugula
½ cup (125 mL) red onion, rinsed and shaved
1⁄3 cup (80 mL) walnuts, toasted
Vinaigrette
¼ cup (60 mL) white balsamic vinegar
1 Tbsp (15mL) maple syrup
2 tsp (10mL) whole grain mustard
¼ cup (60 mL) canola oil
