Roasted Baby Potato & Lentil Salad with Green Goddess Dressing

1 1/2 lb baby potatoes, skin on, cleaned and halved
dash salt and ground black pepper
1 cup (250 mL) cooked or canned green lentils, drained and rinsed
Dressing
2 Tbsp (30 mL) finely chopped chives
2 Tbsp (30 mL) finely chopped tarragon
1 Tbsp (15 mL) finely chopped parsley
Directions
- Preheat the grill to 400°F. Toss the cleaned potatoes in oil and season with salt and pepper. Place the potatoes in foil or on a BBQ safe baking tray and cook for 20-30 minutes with the lid down. Flip potatoes with a spatula after 10 minutes to prevent burning on one side. Potatoes should be tender when poked with a fork but not over cooked.
- Toss the hot cooked potatoes with the lentils and set aside to cool as you prepare the dressing.
- Whisk the yogurt, mayonnaise, chopped herbs, garlic, and lemon juice all together. Season with salt and pepper.
- Toss the warm potatoes and lentils with the dressing.
