Protein-Packed Breakfast Patty

A blended pork and lentil breakfast sausage patty with salt, pepper, sage, fennel, garlic, and thyme. A great breakfast side or breakfast sandwich protein.

    ½ lb (250 g) split red lentils, cooked, drained, pureed

    1 lb (500 g) ground pork

    2 tsp (10 mL) salt

    1 tsp (5 mL) black pepper, freshly ground

    1 Tbsp (15 mL) dried sage

    1 tsp (5 mL) dried fennel, crushed

    2 each, garlic clove, minced

    1 tsp (5 mL) dried thyme

    2 tsp (10 mL) canola oil


Directions

  1. Mix together lentils, pork, salt, pepper, sage, fennel, garlic, and thyme in a large mixing bowl. Combine thoroughly, cover, and chill for 15 minutes to set emulsion.
  2. Divide mixture into 10 x 2.4 oz patties. These can be frozen if prepped ahead.
  3. Heat a skillet with oil over high heat. Fry patties for 4 minutes on the first side, flip, and fry for 3 minutes on the other. Serve with a complete breakfast.
  4. Patties can also be frozen and stored at this point for rapid reheat in a steamer.
