Your favorite comforting biscuits and gravy, but plant-based (but you would never know it), utilizing a "meaty" blend of lentils, roasted and chopped mushrooms, and walnuts (or seeds), with thyme, fennel, and sage.

½ lb (250 g) mushrooms, roasted and minced
½ lb (250 g) walnuts, minced
2 tsp (10 mL) fresh thyme leaves, minced
1 tsp (5 mL) fennel seeds, minced
1 Tbsp (15 mL) sage leaves, minced
2 tsp (10 mL) kosher salt
1 tsp (5 mL) black pepper, fine ground
2 Tbsp (30 mL) extra virgin olive oil
⅓ cup (75 mL) all-purpose flour
4 cups (1 L) whole milk
10 each buttermilk biscuits, warmed
