For a bright and refreshing breakfast add-on or simply a treat to beat the heat, this smoothie, filled with split red lentils, is your ticket to summer! This smoothie mixture can enjoyed as a smoothie, as a smoothie bowl, or frozen into popsicles.

1 1/2 cups (375 mL) orange juice
1 cup (250 mL) grated carrot
1 medium banana, peeled
3/4 cup (175 mL) cooked split red lentils
3/4 cup (175 mL) frozen peaches or mango
1/2 cup (125 mL) vanilla Greek yogurt
1/2 cup (125 mL) ice
1 Tbsp (15 mL) honey
Optional Garnishes:
orange slices,
sliced strawberries,
coconut flakes,
pumpkin seeds
Turn this smoothie mixture into homemade popsicles by pouring the prepared smoothie into popsicle molds or ice cube trays. Insert popsicle sticks mid-freeze and continue to freeze until solid.
