    ½ cup (125 mL) unsalted butter

    1 cup (250 mL) packed brown sugar

    1 large egg

    1 tsp (5 mL) vanilla extract

    ¾ cup (190 mL) lentil puree*

    1½ cups (375 mL) all-purpose flour

    ½ tsp (2 mL) salt

    1 tsp (5 mL) baking soda

    3/4 cup (190 mL) quick cooking rolled oats

    ¾ cup (190 mL) original M&Ms

    ½ cup (125 mL) milk chocolate chips

    ½ cup (125 mL) toffee bits


Directions

  1. Preheat oven to 375° F.
  2. In a bowl, cream butter and sugar together. Add the egg just until blended. Add vanilla and lentil puree and mix until blended.
  3. Sift flour, salt, and baking soda together. Add flour mixture one-third at a time to the creamed mixture. Mix on low until just blended. Add oats, M&Ms, chocolate chips, and toffee bits and lightly blend. Chill in the fridge for 15 minutes.
  4. Scoop 1 Tbsp of dough onto a greased cookie sheet, 2 inches apart, and flatten with a fork. Bake 12-15 minutes. Do not over bake.

To make Lentil Puree: Place cooked, or rinsed & drained canned lentils into a food processor. For every 1 cup of lentils, add ¼ cup water. Blend to make a smooth purée with a consistency like canned pumpkin.
