    5 each 8 oz pizza dough balls, fresh

    5 cups (1.25 L) mozzarella cheese, shredded

    5 cups (1.25 L) Swiss cheese, shredded

    2 ½ cups (625 mL) whole red lentils, cooked

    2 ½ cups (625 mL) feta cheese, crumbled

    10 each egg yolks

    2 Tbsp (30 mL) ajika spice


Directions

  1. Preheat oven to 500°F (260°C).
  2. Half each pizza dough ball into two even balls, and on a well-floured surface, work into large elliptical discs, roughly ¼-inch thick.
  3. Add ½ cup (125 mL) of mozzarella cheese into the center of each disk and roll the sides up to form a boat shape around the cheese. Add ½ cup (125 mL) of Swiss cheese into the middle of each dough and place into the oven.
  4. Bake for roughly 10 minutes, until cheese is beginning to bubble and crust is golden brown.
  5. Remove from oven and add ¼ cup (60 mL) lentils, ¼ cup (60 mL) feta, and 1 egg yolk to each khachapuri and bake for an additional 3-4 minutes.
  6. Season each with the ajika spice and serve warm.
