Lentil Churros

    1 cup (250 mL) split red lentils

    2 cups (500 mL) water

    5 Tbsp (75 mL) sugar

    1 tsp (5 mL) salt

    ¼ cup (60 mL) vegetable oil

    2 cups (500 mL) all-purpose flour

    1 gallon (4 L) oil for frying

    1 cup (250 mL) white sugar

    2 tsp (10 mL) ground cinnamon


Directions

  1. Place lentils, water, sugar, salt, and oil in a pot over medium to high heat and bring to a boil. Cook for 7 minutes.
  2. Remove from heat and add flour incrementally, stirring until mixture turns into a ball of dough.
  3. Heat oil in a deep fryer to 375°F (190°C)
  4. Transfer dough to a piping bag fitted with a star tip. Carefully pipe dough into 5-6inch strips directly into the hot oil and fry until golden.
  5. Drain on a paper towel and toss in white sugar and cinnamon to coat.
  6. Enjoy hot.
