Roujiamo or rou jia mo, literally translates to 'meat sandwiched between bread' and is also referred to as the Chinese Hamburger - it is a street food originating from the cuisine of Shaanxi Province and now widely consumed all over China. Our version blends lentils with beef and eats like a sloppy joe.

2 lbs (1 kg) beef brisket, cut into large chunks
4 cups (1 L) water
2 cups (500 mL) green lentils, dry
⅓ cup (75 mL) Shaoxing wine
3 Tbsp (45 mL) low-sodium light soy sauce
1 Tbsp (15 mL) low-sodium dark soy sauce
1 cup (250 mL) scallions, sliced thin
½ cup (125 mL) ginger, fresh, rough chop
¼ cup (60 mL) Chinese 5-spice
2 cups (500 mL) bay leaves
1 cup (250 mL) hoisin sauce
½ cup (125 mL) rice wine vinegar
12 whole wheat English muffins
2 cups (500 mL) daikon, shaved
2 cups (500 mL) carrots, grated
