    1 cup (250 mL) whole red lentils, cooked and mashed

    ¼ cup (60 mL) feta cheese, crumbled

    ¼ cup (60 mL) parmesan cheese, grated

    ¼ cup (60 mL) cilantro, minced

    1 Tbsp (15 mL) lime juice

    1 tsp (5 mL) cumin, ground

    ½ tsp (2.5 mL) chili powder

    salt and pepper, to taste

    10 large jalapenos, halved lengthwise, seeds and ribs removed

    1 egg beaten

    ¼ cup (60 mL) breadcrumbs


Directions

  1. Preheat oven to 400°F (200°C). Prepare a baking sheet with parchment paper.
  2. In a bowl, combine lentils, feta, Parmesan, cilantro, lime juice, cumin, chili powder, salt, and pepper. Mix well.
  3. Fill each jalapeño half with the lentil mixture, packing it tightly.
  4. Dip each stuffed jalapeño into the beaten egg, then roll in the breadcrumbs.
  5. Place stuffed jalapeños onto the prepared baking sheet. Bake for 15-20 minutes, or until golden brown and the filling is heated through.
  6. Serve hot with your favorite dipping sauce, such as ranch dressing or marinara sauce.
