Indian Inspired “Caprese” Salad

    1 qt (1 L) fresh cherry tomatoes, quartered

    1 qt (1 L) whole red lentils, cooked and shocked

    2 cups (500 mL) green onions, sliced thinly

    2 Tbsp (30 mL) ginger, minced

    5 Tbsp (75 mL) canola oil

    4 cloves garlic - smashed and roughly chopped

    ½ tsp (2.5 mL) ground clove

    2 tsp (10 mL) ground cardamom

    1 tsp (5 mL) sugar

    1 tsp (5 mL) salt

    ½ tsp (2 mL) ground turmeric

    1 tsp (5 mL) garam masala

    1 tsp (5 mL) saffron

    5 Tbsp (75 mL) white wine vinegar

    2 cups (500 mL) Feta cheese, crumbled


Directions

  1. Place cherry tomatoes and lentils in a salad bowl. Add onion and ginger and place in the fridge to chill.
  2. In a small pan, heat oil over a medium-high heat and add garlic, cloves, cardamon, sugar, salt, and turmeric. Stir in the pan for about a minute, then turn off the heat. Stir in garam masala, saffron, and vinegar.
  3. Allow to cool slightly then pour mixture over the tomatoes and lentils and toss to coat.
  4. Serve immediately or allow salad to sit untouched for approximately two hours for ideal taste. Garnish with Feta, toss, and serve.
