    5 cups (1.25 L) split red lentils

    1 Tbsp (15 mL) turmeric

    1 tsp (5 mL) kosher salt

    1 Tbsp (15 mL) ghee (or oil)

    2 Tbsp (30 mL) cumin seeds

    3 cups (750 mL) yellow onion, small dice

    ¼ cup (60 mL) cloves garlic, minced

    ¼ cup (60 mL) ginger, grated

    2 ½ qts (2.5 L) spinach, chopped

    ½ cup (125 mL) water

    2 tsp (10 mL) red chili powder

    1 Tbsp (15 mL) garam masala


Directions

  1. Add lentils and 3 cups (750 mL) water to a large pot over medium to high heat. Add turmeric and salt. Simmer for 8-10 minutes or until lentils are soft and mushy.
  2. Heat ghee or oil in a pan. Add cumin seeds and let them splutter.
  3. Add onion, garlic, and ginger. Sauté until fragrant. Add spinach and cook until wilted.
  4. Add cooked lentils to the spinach mixture. Add water as needed to adjust the consistency, if required.
  5. Season with chili powder, garam masala, and additional salt to taste if necessary. Simmer for 4-5 minutes or until the flavors are well combined.
  6. Serve hot with naan for dipping.
