Lentils are simmered with a curry sauce to create a curried lentil salad, served in a wrap with lettuce, carrot, Feta, and red onion.

1 Tbsp (15 mL) olive oil
1 cup (250 mL) yellow onion, finely minced
2 Tbsp (30 mL) garlic, minced
1 Tbsp (15 mL) curry powder
1 tsp (5 mL) cumin
½ tsp (2 mL) turmeric
½ tsp (2 mL) red pepper flakes (optional, or adjust for spice preference)
1 (14.5 oz) can diced tomatoes, undrained
¼ cup (60 mL) cilantro, minced
¼ cup (60 mL) flat leaf parsley, minced
3 cups (750 mL) whole red lentils, cooked
1 Tbsp (15 mL) lemon juice
salt and pepper, to taste
10 whole wheat tortillas (large size)
1 cup (250 mL) chopped romaine lettuce (or other salad greens)
1 cup (250 mL) shredded carrots
½ cup (125 mL) crumbled Feta cheese
¼ cup (60 mL) red onion, minced
fresh cilantro, chopped (optional)
