    2 quarts (2 L) whole red lentils, cooked and drained

    4 eggs

    1 cup (250 mL) flat leaf parsley, minced

    1 cup (250 mL) Parmesan cheese, finely grated

    1 cup (250 mL) toasted Italian breadcrumbs

    2 Tbsp (30 mL) garlic, minced

    1 Tbsp (15 mL) curry powder

    1 tsp (5 mL) turmeric

    1 cup (250 mL) yellow onion, minced


Directions

  1. In the bowl of a food processor, combine lentils, eggs, parsley, cheese, breadcrumbs, garlic, curry powder, turmeric, and onion. Pulse until a semi smooth consistency has been reached, resembling worked sausage filling. If the mixture is too dry, add a little water to help bring it together.
  2. Allow the mix to stand for 10-15 minutes prior to shaping into 10 equal patties.
  3. Cook patties on a flat top for roughly 4-5 minutes, per side, until a golden-brown crust has developed on the exterior.
  4. Serve patties on a bun with your desired condiments like a blistered red bell pepper petal, baby arugula, and a dollop of raita.
