20 oz (625 g) chicken breast, small dice
2 tsp (10 mL) blackening seasoning
2 ½ cups (625 mL) brown rice, cooked
¼ cup (60 mL) malt vinegar
¼ cup (60 mL) red wine vinegar
4 cups (1 L) sugar snap peas, trimmed and washed
2 cups (500 mL) red bell pepper, julienne
2 cups (500 mL) yellow bell pepper, julienne
2 cups (500 mL) corn kernels
6 cups (1.5 L) iceberg lettuce, rough chop
