    5 cups (1.25 L) spelt, cooked

    5 cups (1.25 L) whole red lentils, cooked

    10 cups (2.5 L) baby arugula, washed

    10 cups (2.5 L) baba ganoush

    10 cups (2.5 L) red bell pepper, medium dice

    5 cups (1.25 L) flat leaf parsley, roughly chopped

    5 cups (1.25 L) dried apricots, roughly chopped

    2 ½ cups (625 mL) walnuts, roughly chopped

    20 oz (600 g) braised beef, shredded


Directions

  1. To plate this dish, prepare a base of spelt and lentils.
  2. Top with arugula, large dollop of baba ganoush, bell pepper, parsley, apricots, and walnuts.
  3. At time of service, finish each bowl with a warm 2 oz serving of braised beef.
