- Heat oil in a large frying pan over medium-high heat. Add lentils and paneer. Cook, stirring with a wooden spoon to break up any lumps, for 5 minutes. Add garlic and ginger and cook, stirring, for 1 minute or until fragrant.
- Add eggplant, green onions, and curry, stirring for 1 minute or until combined. Bring to a simmer and cook undisturbed for 5 minutes. Remove from heat. Add peas and transfer to a serving bowl.
- Place lettuce leaves cup-side up on a serving platter and serve immediately with the paneer and lentil mixture.
