    1 Tbsp (15 mL) kosher salt

    ½ Tbsp (7 mL) black pepper

    2 Tbsp (30 mL) olive oil

    2 cups (500 mL) onions, chopped

    2 cups (500 mL) carrots, chopped

    1 cup (250 mL) celery roots, chopped

    1 cup (250 mL) leeks, chopped

    1 qt (1 L) split red lentils, rinsed

    1 gallon water

    2.5 lbs (1 kg) pork ribs

    1 lbs (500 g) smoked sausage

    1 qt (1 L) potatoes, peeled and chopped

    5 bay leaves

    5 vegetable bouillon cubes


Directions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss onion, carrot, celery, and leek with oil, salt, and pepper.
  3. Roast for 30-40 minutes, or until tender and browned.
  4. In a large stockpot or small steam jacket kettle, combine lentils, water, pork ribs, and bay leaves. Bring to a boil, reduce heat and simmer for 25 minutes skimming the water of all impurities. Remove meat from the mix.
  5. Add roasted vegetables and smoked sausage to the pot. Simmer for an additional 10-15 minutes, or until the vegetables are heated through.
  6. Remove pork from the bones and cut into chunks. Return pork to the soup.
  7. Add potatoes and bouillon cubes. Cook until the potatoes are tender.
  8. Remove bay leaves. Adjust seasoning with salt and pepper if desired.
