    2 lbs (1 kg) whole red lentils

    3 qts (3 L) water

    5 bay leaves

    3 cups (750 mL) potato, peeled and cubed

    3 cups (750 mL) carrot, peeled and cubed

    2 cups (500 mL) yellow onion, chopped

    ¼ cup (60 mL) garlic, minced

    1 Tbsp (15 mL) dried thyme

    1 Tbsp (15 mL) kosher salt

    2 tsp (10 mL) black pepper, fresh ground

    2 Tbsp (30 mL) butter

    ½ lb (250 g) Goat’s cheese, crumbled

    fresh parsley, chopped


Directions

  1. Rinse lentils and add them to a large pot with plenty of water along with bay leaves. Bring to a boil, reduce heat and simmer until lentils are tender, about 15-20 minutes. Drain any excess water.
  2. Boil potatoes, carrots, and onions in a large pot of salted water until tender. Drain.
  3. Mash cooked lentils, potatoes, carrots, and onions together in a large bowl.
  4. Add butter, thyme, salt, and pepper, and mash until smooth.
  5. Stir in Goat’s cheese until it has melted and incorporated into the stamppot.
  6. Garnish with parsley. Serve hot in a heated hotel pan with smoked sausage and rye bread as optional sides.
