    2 cups (500 mL) whole red lentils, dry

    1 qt (1 L) vegetable broth

    ½ cup (125 mL) tahini

    ¼ cup (60 mL) garlic, minced

    ¼ cup (60 mL) lemon juice

    2 tsp (10 mL) cumin

    1 tsp (5 mL) ground coriander

    ½ tsp (2.5 mL) turmeric

    ½ tsp (2.5 mL) cayenne pepper

    salt and pepper, to taste

    2 Tbsp (30 mL) extra virgin olive oil

    ¼ cup (60 mL) cilantro, minced


Directions

  1. In a medium saucepan, combine lentils and broth. Bring to a boil, reduce heat and simmer, covered, for 15-17 minutes or until the lentils are tender. Drain and set aside to cool.
  2. In the bowl of a food processor, add lentils, tahini, garlic, lemon juice, cumin, coriander, turmeric, cayenne, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, add water 1 Tbsp (15 mL) at a time until desired consistency is reached.
  3. Transfer hummus to a serving bowl and drizzle with oil and garnish with fresh cilantro. Serve with pita bread, vegetables, or crackers.
