2 cups (500 mL) Roma tomatoes, small dice
2 cups (500 mL) avocado, diced
1 ½ cups (375 mL) sweet corn kernels
½ cup (125 mL) red onion, minced
1 cup (250 mL) red bell pepper, small dice
¼ cup (60 mL) jalapeno, seeded and minced
½ cup (125 mL) cilantro, finely chopped
2 Tbsp (30 mL) lime juice
½ cup (125 mL) canola oil
2 Tbsp (30 mL) red wine vinegar
