2 cups (500 mL) whole red lentils, cooked and drained well
2 cups (500 mL) onion, roughly chopped
¾ cup (175 mL) parsley, chopped
¾ cup (175 mL) cilantro, chopped
2 tsp (10 mL) salt
½ tsp (2 mL) dried hot red pepper
6-8 garlic cloves
2 tsp (10 mL) cumin
1 cup (250 mL) all-purpose flour (only if needed)
2 tsp (10 mL) baking powder
¼ cup (60 mL) canola oil
10 burger buns
20 oz cacik (see below)
20 butter lettuce leaves
5 cups (1.25 L) pickled red onions
To make the Cacik (Turkish Yogurt with Cucumbers & Herbs)
Ingredients:
1 tsp (5 mL) garlic puree
1 cup (250 mL) plain Greek yogurt (or sub plant-based for vegan option)
2 tsp (10 mL) dried mint
½ cup (125 mL) Persian cucumbers, grated
2 Tbsp (30 mL) extra virgin olive oil
½ tsp (2 mL) kosher salt
Directions:
Combine all ingredients and store chilled.
