Cheesy Protein Mashed Potatoes

    ¼ cup (60 mL) whole milk

    3 pounds (1.5 kg) Yukon gold potatoes, washed, cooked, and quartered

    1 cup (250 mL) split red lentils, cooked and drained well

    1 cup (250 mL) sharp cheddar cheese, shredded

    ¼ cup (60 mL) unsalted butter, room temperature

    2 Tbsp (30 mL) cream cheese

    1 tsp (5 mL) salt

    1 tsp (5 mL) pepper


Directions

  1. Heat milk in a small saucepan.
  2. Using a ricer or food mill, process potatoes until they are smooth.
  3. Add butter and half the milk to the potatoes and stir vigorously. Add more milk, 1 Tbsp (15 mL) at a time until the potatoes are creamy but not watery.
  4. Stir in the cheese and lentils and keep stirring until the cheese has been incorporated into the mash.
  5. Season with salt and pepper to taste.
