1 lb (500 g) raw shrimp, deveined, shell and tail removed
4 Tbsp (60 mL) fish sauce
½ lb (250 g) split red lentils, cooked
1 tsp (5 mL) salt
2 tsp (10 mL) sugar
½ tsp (2 mL) black pepper
4 Tbsp (60 mL) canola oil
20 each, sugar cane pieces, 4 inches in length*
2 Tbsp (30 mL) red chile, sliced, seeded
½ cup (125 mL) cilantro
1 cup (250 mL) sweet and sour sauce
*Note> A simplified version of this recipe can be made using skewers and forming the shrimp mixture around the skewer, omitting the sugar cane.
