    2 lb (1 kg) ground beef

    2 Tbsp (30 mL) cumin, ground

    1 Tbsp (15 mL) tumeric, ground

    1 tsp (5 mL) salt

    1 tsp (5 mL) black pepper, ground

    1 lb (500 g) split red lentils, cooked, divided

    ½ cup (125 mL) beets, canned and drained

    ⅓ cup (75 mL) canola oil

    2 cups (500 mL) cucumber, small dice

    2 cups (500 mL) tomato, small dice

    2 cups (500 mL) arugula

    10 each, naan flatbread, lightly toasted on griddle

    15 oz (425 g) Goat’s cheese, crumbled


Directions

  1. In a large sauté pan, add beef and begin to brown the beef. Add cumin, turmeric, salt, and pepper. When meat is browned, add half of the lentils to absorb flavor and heat through. Toss well to coat.
  2. While the meat crumble is cooking, add remaining lentils and beets to a food processor with canola oil and blend to make a puree.
  3. Mix cucumbers, tomatoes, and arugula together in a bowl and set aside
  4. To serve, spread puree on the flatbread, top with meat crumble, vegetable mix, and Goat’s cheese.
