A light and lively salsa is made with creamy avocado, cooked green lentils, radish, cilantro, jalapeno pepper, garlic, and lime. Simply top warm corn tortillas with cooked eggs, a bit of the salsa, and Feta cheese. Don’t forget that drizzle of hot sauce!

1 ripe avocado, diced
1/2 cup (125 mL) cooked green lentils
1/4 cup (60 mL) diced red onion
1/4 cup (60 mL) chopped fresh cilantro, plus more for serving
half jalapeno pepper, diced
2 radishes, diced
1 lime, juiced
1 Tbsp (15 mL) extra virgin olive oil
1 garlic clove, minced
1/2 tsp (2 mL) chili powder
to taste, salt and pepper
TACOS:
8 corn tortillas
2 Tbsp (30 mL) unsalted butter
8 eggs
1/2 cup (125 mL) crumbled Feta cheese
hot sauce, for serving
