1 cup (250 mL) red or green lentils
canola oil, for cooking
1 large onion, chopped
1 large tomato, chopped
¼ cup (60 mL) chopped cilantro stems
2-3 garlic cloves, chopped
1 Tbsp (15 mL) grated fresh ginger
1-2 Tbsp (15-30 mL) curry paste or powder
1 tsp (5 mL) chili powder
½-1 can (14 oz/398 mL) can coconut milk
½ tsp (2 mL) salt
fresh cilantro, for garnish
