There are two types of people in this world - those who love borscht, and those who haven't tried it yet! This traditional Ukrainian soup is packed full of nutrients thanks to hearty doses of beets, lentils, and kale.

2 Tbsp (30 mL) canola oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
4 beets, diced
3 garlic cloves, minced
1 tsp (5 mL) paprika
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
6 cups (1.5 L) chicken, beef, or vegetable stock
1 can (28 oz/796 mL) diced tomatoes
1 cup (250 mL) green lentils
4 cups (1 L) kale, centre rib removed, torn into small pieces
1 lemon, juiced
1/2 cup (125 mL) chopped fresh dill
1 Tbsp (15 mL) sugar
Optional: sour cream or plain Greek yogurt (for garnish)
